Chocolate Chip Muffins

Ingredients
Wet Mix ½ cup butter or margarine ½ cup yoghurt
½ cup sugar 1 teaspoon vanilla
2 eggs 1 cup milk
½ cup chopped chocolate or chocolate chips
 
Dry Mix 3 cups self-raising flour
 
Makes 12 - 14 Muffins
Method

Preheat the oven and grease the muffin pans.  

Thoroughly blend the butter (or margarine) and sugar and beat in the eggs, milk, yoghurt and vanilla.  

Mix in the chocolate chips.  

Gently fold the flour into the combined wet mix.

Place in prepared pans.

Bake at 180ºC for 15 to 20 minutes.

 

Variations

Try these variations on the basic recipe:

Double Choc Add 2 tablespoons of cocoa blended with 4 tablespoons of boiling water to the combined wet mix.
Choc & Raisin &/or Pecan Add ½ cup chopped raisins and / or ½ cup chopped pecans to the combined wet mix of the basic or Double Choc mixtures.
Chocolate Macaroon Add ½ cup desiccated coconut to any of the above chocolate recipes.
